The Kingston Trio is an American folk and pop music group.
They helped launch the folk revival of the late-1950s to early 1960s, and continued to
thrive asan acoustic group despite the increasing dominance of rock and roll.

 

The Kingston Trio was formed in 1957 in the Palo Alto, California, area by Bob Shane,
 Nick Reynolds, and Dave Guard, who were just out of college.

1990 Hong Kong martial arts-action-comedy film directed by Danny Lee and Lee Lik -Chi,
and starring Stephen Chow.


Legend of the Dragon(賭聖打王: What A Champion Of Billiad) was one of Stephen Chow's
first star vehicles. Whilst working for Danny Lee's Magnum Productions, he noticed that
Chow was more of a comedian than an action star.

Kundun is a 1997  film written by Melissa Mathison and directed by Martin Scorsese.
It is based on the life and writings of the Dalai Lama, the exiled political and spiritual
leader of Tibet. Tenzin Thuthob Tsarong, a grand nephew of the Dalai Lama, stars as
the adult Dalai Lama.

"Kundun" (སྐུ་མདུན་ Wylie: Sku-mdun in Tibetan), meaning "presence", is a title by
which the Dalai Lama is addressed. Kundun was released only a few months after
Seven Years in Tibet , sharing the latter's location and its depiction of the Dalai Lama
at several stages of his youth, though Kundun covers a period three times longer.

'고귀한 존재'를 뜻하는 티베트어 [쿤둔Kundun]은 달라이 라마의 유아명으로 이 영
화는 `살아있는 神`이라 불리는 달라이 라마의 어린 시절(2세~ 24세) 관한 이야기다.

두 살 박이 어린아이 `라모`는 전대의 달라이 라마가 사용하던 물건들을 찾아내는 테
스트를 통과한다. 그가 바로 달라이 라마의 환생, 즉 14대 달라이 라마가 되는것이다.
3년 후 아이는 불과 다섯 살의 나이로 [쿤둔]에 즉위한다. 이로부터 1959년 열여덟살
이 된 14대 달라이 라마가 인도로 망명 하기까지 2차 대전, 중국의 티베트 침략 등 격
동하는 역사의 한 가운데 서 있는 어린 [쿤둔]의 삶이 영화 전체에 펼쳐진다.



눈 덮인 웅장한 히말라야 산맥이 화면에 나타나면서 시작 한 영화는 2살난 라모 된둡
(쿤둔 어릴 때 이름) 이 라마승에게서 13대 달라이 라마의 환생으로 인정 된 후, 라사
(티벳의 수도)의 포탈라 궁에서 달라이 라마로서의 교육을 받는 모습을 차분 하게 사
실적으로 보여준다.


여러가지의 다양한 테크닉도, 복잡 정교 하고 치밀한 플롯도, 여기 에서는 이용 되지
않고있다. 아름다운 카메라와, 필립·글래스의 음악, 자연스러운 연기에 의해, 달라이
라마의 반생을, 안티 헐리우드적인 섬세함으로, 헐리우드적 스케일의 크기를 양립시
켜 그린 걸작.


라스트신(last scene)의 달라이 라마가 국민의 불행을 생각 하면서, 피난하지 않고는
살수 없는 상황에서의 그 고뇌의 표정은 눈물을 훔치게 만든다.

티벳으로의 귀환 노력은 모두 수포로 돌아가고 결국 쿤둔은 인도로 망명하기에 이른다.
영화는 13대 달라이 라마가 사용 했던 망원경을 가지고 온 쿤둔이, 그 망원경을 통해서
세상을, 어쩌면 그렇게도 그리는 조국과 동포가 있는 티벳을 바라 보면서 끝을 맺는다.





쿤둔이 인도 국경을 넘을 때 인도 군인과의 대화중에서 -

군인- 실례지만 당신은 누구이십니까?
쿤둔- 난 그저 평범한 승려일 뿐입니다.

군인- 당신은 부처이십니까?
쿤둔- 나는 그림자라고 생각합니다. 물에 비친 달처럼. 단지 당신이 나를 통해서 자신의
모습을 볼 수 있도록 노력할 뿐 ...

처녀의 샘은 스웨덴의 거장 잉그마르 베르히만이 '중세의 전설'을 기초로 하여 만든
영화다. 삶과 죽음, 신과 인간에 대한 고찰을 다룬 작품으로 '제 7의 봉인'에 이어서
다시 중세시대를 배경으로 하여 인간의 탐욕과 시기, 그리고 신의 자비와 용서를 다
루고 있다.

처녀의 샘은 처음부터 이런 인간의 죄악의 모습이 나타나고, 처절한 강간 장면이 직
접묘사되는 어둡게 흘러가는 영화지만, 결말을 굉장히 숭고하게 맺고 있다.

햄버거 스테이크는 쉬울거 같지만 막상 만들어보면, 고기에서 누린내가 나기 쉽고
양식 레스토랑에서 먹는 맛이 안나서 실패 하는 경우가 많은데 우튜부 동영상에서
본 조리사 데이브의 Salisbury Steak , 또는 Hamburger Steak with Gravy 는 맛이
좋고 고기의 냄새가 전혀 나지 않을 뿐더러 부드러워 아이들이나 노인들에게도 좋
은 음식.




햄버거 스테이크 만들기

다진(갈은) 쇠고기 500g, 올리브 오일, 다진 양파 1개, 다진 마늘, 소금, 후추,계란
밀가루 1 큰술, 닭고기스프(stock) 1 캔, CRAFT 바베큐 소스 1 큰술, 빵가루 조금


커다란 볼에 갈은 쇠고기 넣고 계란 풀어 넣고 치킨스탁을 붓고 (쇠고기 다시다를
물에풀어도 괘안아요) 다진 양파, 마늘을 듬뿍 넣고, 크래프트 바비큐 소스 ( 이게
상당히 중요함, 크래프트 아닌 다른 블렌드도 상관없고 우스타소스나 스테이크소
스도 괘안아요, 가급적 바비큐 소스)빵가루, 그리고 소금 후추넣고 잘섞어 치댄다.


팬에 올리브유 1큰술을 두르고 다진 양파를 조금 뿌린위에 잘 반죽해 손에 기름을
충분히 바른 다음 반죽을 타원형 모양으로 만든 패티를 서서히 지진다.
(프라이팬에서 앞뒤 적당히 구운 후 그릴로 맞추어놓은 오븐에 넣어 익혀도 된다)

다익힌 패티를 플래이트에 이쁘게 담아 그래이비 소스를 듬뿍 뿌려 맛있게 먹는다.
따뜻한 밥과 함께 브록콜리나 아스파라거스 같은 야채를 조리 해서 곁들이면 좋다.


* 그래이비(Gravy) 소스 만들기
패티를 구워낸 팬에 오일이 있는 채로 열을 가한 후, 밀가루를 적당히 넣고 볶다가
치킨 국물(broth)과 우유를 넣고 꿇이다 후추,소금으로 간한다.

broth(stock) - 묽은 수프; (고기·생선·야채 등의) 육즙(肉汁), 수프 스톡(stock)







Salisbury Steak : Hamburger Steak with Gravy





Hamburger Steak 는 일본식 영어의 하나이며, 영어로는 햄버거(hamburger), 혹은
살리스버리·스테이크(Salisbury steak)라고 불린다.

햄버그(hamburg)의 기원은, 독일의 함부르크(hamburg)에서 노동자들에게 적합한
식사로서 유행한 타르타르스테이크(tartar steak)를 구워, 소스를 뿌려서 맛을 낸 요
리 로부터라고 전해지고 있다. 한편, 타르타르스테이크(tartar steak)는 13세기 경에
유럽에까지 공격 했었던 몽골로이드(Mongoloid)계 민족의 타타르(Tatar)인이 먹은
생육요리(육회)가 시작이라고 전해진다.

타르타르스테이크(tartar steak) - 독일 요리의 하나. 익히지 않은 쇠고기를 곱게 다
져 그 위에 계란노른자위를 얹어 피클 따위를 곁들이고 소금, 후추 따위로 조미하여
먹는다.


대 항해 시대, 선내에 비축 되어 있던, 몹시 단단히 굳어진 고기를 건조 전의 상태에
못지 않을 정도로 연하고 맛있게 조리 하기 위해서 연구해 만들어진 조리 방법 이다.
아메리카(United States of America)에서는 세계대전 중 쇠고기 스테이크는 사치스
러우므로 햄버그(hamburg)로 대처해야 한다는 운동도 있었다고 한다. 나중에 햄버
그(hamburg) 패티를 빵에 끼운 햄버거가 크게 인기를 얻고, 맥도날드 등 패스트 푸
드 점포의 주류가 되었다.

(한국드라마<식객>에서 주인공 성찬이 요리경연에서 쇠고기의 가장 값이싸고 질긴
부위를 열심히 연구해서 부드럽고 맛나는 불고기로 만들던 장면이 생각나는.... )



1960년대 이후의 고도 경제 성장기에 있어서의 일본에서는 영양이 풍부한 육고기가
비교적 고가 식품 재료 이었다. 저렴한 부위의 쇠고기，돼지 고기를 섞어, 다진고기
(닭고기와 돼지고기등)을 사용한 이 요리를 식탁에 올림으로, 호화스러운 저녁 식사
를 연출 할 수 있어 그 당시 주부들이 좋아하는 저녁 식사의 메뉴로 올랐다는 배경도
있고, 그 후엔 쉽게 데워 먹을 수 있는 인스턴트 햄버그가 시판 되는 등, 순식간에 일
본 전국에 널리 퍼졌고, 또 1970년대경부터 급속히 레토르트 식품(retort food) (레토
르트(retort)·햄버그(hamburg) 등의 등장·보급에 의해(한국에도) 흔한 요리가 되었다.
